Why structured data?
Search engines read your HTML, but they guess the meaning of your content. Structured data removes the ambiguity: it explicitly declares "this is a recipe, with this cooking time and this rating", "this is a product, at this price and in stock". Result: rich displays in the search results, which catch the eye and improve click-through rate.
